Afghan saffron firni is a smooth milk pudding with cardamom, a delicate saffron infusion and a pistachio finish. This cornflour version uses a short ingredient list and a gently cooked base, making it an inviting dessert for a special meal.
Serves 4 · A milk pudding thickened with cornflour · Serve cooled in small dishes · Optional rose water adds a floral note.

Ingredients for 4 servings
- 500 ml milk
- 3 tablespoons cornflour (cornstarch)
- 4 tablespoons sugar
- 1 pinch of salt
- ¼ teaspoon ground cardamom
- 1 small pinch of saffron threads
- 3 tablespoons hot water, for the saffron infusion
- 1 tablespoon chopped pistachios, to garnish
- 1 teaspoon food-grade rose water, optional
How to make saffron firni
- Infuse the saffron. Put the threads in 3 tablespoons of hot water and steep for 10 minutes.
- Make a slurry. Mix the cornflour with 100 ml of the cold milk until completely smooth.
- Warm the milk. Heat the remaining milk in a pan with the sugar and salt, stirring to dissolve the sugar.
- Add the slurry. Slowly stir the cornflour mixture into the warm milk, stirring continuously.
- Thicken. Cook gently over medium heat, stirring constantly, until the pudding thickens and becomes smooth.
- Flavour. Stir in the saffron water and threads, cardamom and optional rose water until evenly combined.
- Portion and serve. Divide between four small dishes. Allow to cool, then chill if serving cold. Garnish with chopped pistachios.
Tips for a smooth texture
Dissolve the cornflour in cold milk before adding it to the pan: adding dry starch directly to hot liquid can produce lumps. Stir the base and corners as it thickens to prevent catching.
For a fuller saffron infusion, allow up to 15 minutes of steeping. Keep the amount small so the aroma remains balanced. If using rose water, check its strength and add it cautiously.
Serving firni
Firni is a welcoming dessert to share at celebrations or after a special meal. Small individual dishes make it easy to serve and give the garnish room to shine. Keep cooled leftovers covered in the refrigerator.
