Chilled saffron-cardamom horchata with ice and a cinnamon garnish

Ingredients for 2–3 glasses

  • 100 g short-grain rice
  • 500 ml water, divided
  • 250 ml milk or a plant-based alternative
  • 1–2 small pinches of saffron threads, to taste
  • ¼ teaspoon ground cardamom
  • ½ teaspoon ground cinnamon, plus a little to serve if desired
  • 2 tablespoons cane sugar or honey
  • Ice cubes, to serve

How to make saffron-cardamom horchata

  1. Soak the rice. Rinse well, put in a covered container with 300 ml of the water and soak overnight in the refrigerator.
  2. Infuse the saffron. Take 2–3 tablespoons from the remaining water, warm it and steep the threads for about 10 minutes.
  3. Blend. Blend the soaked rice with its soaking water, the cinnamon and the remaining plain water until finely processed.
  4. Strain. Pour through a fine sieve or suitable straining cloth into a clean jug.
  5. Flavour and chill. Stir in the milk, sugar or honey, cardamom and saffron infusion. Mix until the sweetener dissolves and refrigerate for at least 30 minutes.
  6. Serve. Stir again, pour over ice and finish with a little cinnamon if desired.

Tips for a smooth, balanced drink

Straining thoroughly gives a finer texture. Some settling is natural, so stir before pouring. Keep the prepared drink refrigerated and serve it chilled.

Choose a plant drink whose flavour complements the spices. An unsweetened version gives more control over sweetness. Begin with the smaller saffron amount if you prefer a delicate aroma.
