Sabzi Polo with Saffron — Persian Herb Rice

Contents

Sabzi polo with saffron is Persian herb rice with a fresh green aroma and a warm golden accent. Parsley, dill and spring onions complement the saffron without hiding it. This simple version uses the traditional parboiling-and-steaming approach.

Ingredients for sabzi polo with saffron

  • 250 g basmati rice
  • 0.1–0.15 g saffron threads
  • 2 tablespoons warm water or warm milk
  • 1 bunch parsley, finely chopped
  • 1 bunch dill, finely chopped
  • 3–4 spring onions, finely sliced
  • 30 g butter or 2 tablespoons neutral vegetable oil
  • 1 teaspoon salt, or to taste
  • Enough water to parboil the rice freely, then drain

The original ingredient list gave approximately 450 ml water, a quantity more suited to an absorption method. For the parboiling method below, use a generous pan of water and drain it before steaming. Use oil and water for the saffron infusion to make the dish vegan.

Step-by-step method

  1. Prepare the saffron. Lightly crush the threads and steep in the warm water or milk for 10–15 minutes.
  2. Rinse the rice. Wash the basmati until the water runs mostly clear.
  3. Parboil. Bring a generous pan of lightly salted water to the boil. Add the rice and cook until the grains have softened outside but retain a firm centre. Drain well.
  4. Prepare the herbs. Wash and dry the parsley, dill and spring onions, then chop finely.
  5. Combine and steam. Warm the butter or oil in a saucepan. Add the rice loosely, pour over the saffron infusion and gently fold in the herbs. Cover and finish over low heat until the rice is tender. Avoid stirring repeatedly or pressing down the grains.
  6. Rest and serve. Remove from the heat and leave covered for a few minutes. Fluff carefully with a fork.

Flavour and common mistakes

Saffron contributes warmth and depth, while the herbs keep the rice fresh and aromatic. Serve as a vegetarian main with vegetables, or pair with gently cooked salmon.

  • Too much saffron: use a measured dose so the herb aromas remain clear.
  • Coarsely chopped herbs: chop finely to spread them evenly through the rice.
  • Excessive heat: finish gently to avoid scorching the bottom and dulling the herbs.
  • Overcooked rice: drain while the centre is still firm; steaming completes the cooking.
