Saffron rice with almonds and raisins combines fluffy golden basmati, toasted nuts and a gentle sweetness. Serve it as a festive vegetarian main or an elegant accompaniment to vegetables or meat.
Ingredients
- 250 g basmati rice
- 0.1–0.15 g saffron threads
- 2 tablespoons warm water or warm milk
- 40 g flaked or slivered almonds
- 40 g raisins
- 30 g butter or 2 tablespoons neutral vegetable oil
- 1 teaspoon salt, or to taste
- Approximately 450 ml water; adjust to the rice packet instructions
Saffron adds a warm, lightly floral aroma that links the nuts and fruit. For a vegan version, use oil and water rather than butter and milk.
How to make saffron rice with almonds and raisins
- Prepare the saffron. Lightly crush the threads and steep in warm water or milk for 10–15 minutes.
- Rinse the rice. Wash the basmati until the water runs mostly clear, then drain.
- Toast the almonds. Warm a little of the butter or oil in a pan and toast the almonds over medium heat until golden. Add the raisins briefly, just to warm them, then set the mixture aside.
- Cook the rice. Warm the remaining butter or oil in a saucepan and stir in the rice briefly. Add the water, salt and saffron infusion, including the threads. Bring to a gentle simmer, cover and reduce the heat. Cook until tender and the liquid is absorbed, following the rice packet timing. This uses the absorption method; do not pre-boil and drain the rice first.
- Rest and combine. Leave covered off the heat for a few minutes. Fluff gently with a fork, then fold in the almonds and raisins without crushing the grains.

Flavour and common mistakes
The almonds add a nutty bite, the raisins a soft sweetness and the saffron a warm aromatic base. Keep the additions balanced so none dominates.
- Dark almonds: stop at golden rather than deeply browned to avoid bitterness.
- Overheated raisins: warm them briefly so they remain soft.
- Too much saffron: measure the stated quantity for a gentle, balanced flavour.
- Heavy mixing: fold the toppings into the rested rice carefully to keep the grains separate.
