These are characteristic saffron-related compounds studied for their contribution to colour, taste and aroma.

What the 2025 study reported

Processing and storage: Crocin accumulation remained stable in the studied products.

Other compounds: Picrocrocin and safranal were retained or increased during storage.

Sensory tests: The products showed a saffron-like flavour.

Scope: The researchers evaluated composition, antioxidant capacity and sensory attributes of processed tomato products.

The findings support development of food prototypes carrying these metabolites. They do not turn the tomatoes into saffron stigmas, or prove that eating them produces a clinical health effect.

Why a food matrix matters

For a product developer, an ingredient’s performance depends on the complete recipe and process. A desirable compound needs to remain useful in the actual food, rather than only in a freshly prepared laboratory sample.

Possible development questions include whether a tomato-based ingredient fits a sauce, soup or prepared meal, how flavour changes with the recipe, and how much colour or aroma consumers prefer. These are questions for testing, not promises of a finished commercial product.

What remains to be assessed

Recipe performance: Results from the studied products should not be assumed for every combination of salt, fat, temperature and storage.

Health claims: An antioxidant assay is not evidence of a demonstrated benefit in people.

Scale and economics: A promising research platform still needs production, cost and supply-chain assessment.

Identity: Labelling should clearly distinguish an engineered tomato ingredient from the saffron spice.

Market status: This article does not establish authorisation or availability for sale in any particular jurisdiction.

Frequently asked questions

Is Tomaffron the same as adding saffron to tomatoes?

No. This research uses an engineered tomato platform. Adding harvested saffron to a tomato recipe is a separate culinary approach.

Does stable crocin mean every benefit is preserved?

No. Chemical stability, flavour and clinical effectiveness are different outcomes and require different tests.

Can this replace agricultural saffron?

It may offer an ingredient-development route, but it does not reproduce the form, origin or grower connection of hand-harvested saffron threads.

Study and further reading

Lobato-Gómez, M. et al.
