Saffron chicken biryani with golden basmati rice and aromatic spices

Ingredients for 3–4 servings

  • 300 g basmati rice, rinsed and drained
  • 300 g chicken breast, cut into bite-sized pieces, or meat from 2 chicken legs
  • 1 large onion, finely chopped
  • 2 garlic cloves, crushed
  • A 2 cm piece of ginger, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground cardamom
  • 1 small pinch of saffron threads
  • 150 g plain yoghurt
  • 3 tablespoons oil or ghee
  • 400 ml chicken stock
  • 3 tablespoons warm water, for the saffron
  • Salt and pepper, to taste
  • Optional: fried onions or toasted almonds, to garnish

How to make saffron chicken biryani

  1. Infuse the saffron. Steep the threads in warm water for 10 minutes.
  2. Cook the aromatics. Heat the oil or ghee in a heavy-based pot. Cook the onion until golden, then add the garlic and ginger and cook briefly.
  3. Add the spices. Stir in the turmeric, cumin, cinnamon and cardamom and warm them briefly without burning.
  4. Cook the chicken. Add the bite-sized chicken pieces and brown them. Lower the heat and stir in the yoghurt. Cook gently until the chicken is cooked through; leg meat may need longer than small breast pieces.
  5. Add the rice and liquid. Stir in the drained rice, stock and saffron infusion. Season carefully, taking the stock’s salt content into account, and bring to a gentle simmer.
  6. Cover and cook. Cook over low heat for about 20 minutes, until the rice is tender and the liquid absorbed. Check the chicken is fully cooked. If the rice needs longer, add a small splash of hot water and continue covered.
  7. Serve. Let the pot rest briefly off the heat, then fluff gently. Finish with fried onions or toasted almonds if desired.

Tips for a balanced one-pot dish

Keep the final heat low and use a close-fitting lid. Avoid repeated stirring while the rice cooks, and add extra liquid only in small amounts if necessary.

Traditional biryani methods vary, including layered versions. This recipe uses a simpler absorption method; a separate parboiled layering method needs different liquid quantities and timing.

Frequently asked questions

Can I use whole chicken legs with the same timing?

Do not assume the same cooking time. For this version, use bite-sized meat and cook it through before adding the rice.

Can I skip the saffron infusion?

Pre-steeping helps distribute the colour and aroma. Add both the liquid and threads.

Which allergens are present?

Yoghurt and ghee contain milk ingredients, stock may contain allergens, and optional almonds add a tree-nut allergen. Check labels.
