India’s spice landscape is witnessing a quiet revolution. In Thrissur, Kerala, a former Gulf-based professional, James Kappan, has achieved what was once thought nearly impossible — successfully cultivating saffron indoors using aeroponic technology.
Saffron, often called “red gold”, has traditionally been grown in Kashmir, where climate and soil conditions are ideal. However, changing weather patterns, pest infestations, and declining arable land have drastically reduced production over the past decade. India now grows only 10% of its domestic saffron demand, relying heavily on imports from Iran.

Seeing this gap, James — after working for 20 years in Saudi Arabia’s defence sector — decided to experiment with a soil-free cultivation system back home. In aeroponics, plants grow with their roots suspended in air and receive nutrients through fine mist sprays, mimicking optimal natural conditions.
“During a trade fair, I realized the huge demand for saffron in India,” James recalls. “After studying the market, I brought corms (saffron bulbs) from Kashmir, and within weeks, the flowers began blooming.”
His setup includes a UV-controlled room, specialized lighting systems, racks, and mist-based irrigation, all fine-tuned under the guidance of scientists from the National Chemical Laboratory in Pune. The results have been promising: saffron flowers have bloomed successfully, with stigma strands ready for drying and packaging.
Although the initial investment for indoor farming is high — due to infrastructure and energy needs — the benefits are significant:
A single kilogram of saffron requires about 100,000 flowers, and sells in India for ₹1,500 to ₹2,000 per gram, depending on purity. James now plans to expand his production and market his brand under the name “Kashmiri Kesar”, aiming to contribute to India’s self-reliance in premium saffron.
This experiment could inspire a new wave of technological saffron farming across India — combining science, entrepreneurship, and tradition to bring one of the world’s rarest spices closer to consumers.
